The Swiss company Evolva has developed a synthetic vanilla set to be released later this year. But this is no product of the food technology we’ve seen all our lives – the food technology that brought us margarine, monosodium glutamate and artificial flavors. This artificial vanilla will be the first major food additive created with synthetic biology.
What is that?
Synthetic biology is an emerging technology that goes way beyond genetic modification, the process of splicing DNA from one organism into another. It is the total and complete human engineering of biology. The natural DNA sequence is removed from a cell, and a new computer created DNA sequence is placed into that cell.'
